I have scoured this section but have not found exactly what I am looking for.
So my curiosity has gotten the best of me and now I have to ask...
What all exterior panels are removable?
I pretty much know the front fenders, doors, hood and hatch all are. But what about the rear quarter panels?
And the roof/cab is a no-go I know lol.
Also, what holds these on? Just bolts or is there some welds in there somewhere that will need to be cut?
And if there is anything else (catch 22's, year differences, hidden gremlins, do-not-do's, etc.) please let me know.

Eagles are unibody, meaning they have a subframe integrated into the body and the body itself is part of the major supportive structure of the car, so pretty much what you listed, and that's it.
and don't forget that the front fenders have a weld point near the windshield at the top. You have to cut it there.
The rear quarter panels are not removable.
Also, be prepared to remove a lot of stuff if you replace a fender, includin headlights and buckets, washer bottle, inner fender well cover (with its million and a half bolts), the fender trim on both sides, a supporting bracket and the metal wheel well trim pieces...
